Pumpkin Waffles

I found THIS recipe and really wanted to try it. I knew it was too involved for me to actually use for breakfast. So I made it for dinner last night! So yummy!

*The recipe calls for buttermilk. Instead of buying buttermilk, you can just "make" it by pouring 1 Tbsp. lemon juice or vinegar into a liquid measuring cup and then add enough milk to bring it up to one cup. This recipe calls for 2 cups, so double it. :)

Zucchini Muffins

This is my mom's recipe and it is SO GOOD!!

1 1/8 C. oil *I used applesauce
3 C. sugar
2 t. vanilla
3 eggs
4 1/8 C. flour
1 1/2 t. salt
2 t. baking powder
1 t. baking soda
4 t. cinnamon
1/2 t. nutmeg
1/2 t. cloves
1/2 t. all spice
4 2/3 C. shredded zucchini *I only had about 3 C. and it turned out fine.
1 1/4 C. chopped walnuts (optional)

Cream oil and sugar. Slowly beat in vanilla and eggs. In separate bowl, combine dry ingredients. Add to the "wet" bowl- just to combine. Add zucchini and nuts. Bake at 350 degrees for 25-30 minutes. Makes about 2 dozen regular size muffins.

Easy Birthday Cake


Jamie requested this cake for her bday. My mom used to make it but hasn't in a long time and I've never made it before this weekend. It turned out just like we remembered it and it is so easy to do.

It is basically just a yellow cake with a yummy "filling".

Make cake batter according to instructions on box. Spread into greased 9x13 pan.

Make filling:
Cream the following-
8 oz. cream cheese, softened
1/3 C sugar
1 egg

Spread over the top of the cake batter as best you can without "mixing it together". Sprinkle one cup of chocolate chips over entire cake. Bake according to cake mix instructions.

Yummy with vanilla ice cream.

Pumpkin Crumb Coffee Cake

*recipe taken from a Kraft foods magazine a few years ago, I think.

TOPPING
1 C all-purpose flour
1/2 C packed dark brown sugar
Pinch of salt
1 1/2 tsp. cinnamon
6 Tbsp. unsalted butter, cold, cut into pieces *I used margarine since that's what I had on hand.

CAKE
2 C all-purpose flour
1 1/2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1 Tbsp. cinnamon
2 tsp. ground ginger
1/2 tsp. nutmeg
1/3 C vegetable oil
3/4 C unsweetened applesauce
1 15 oz. can pumpkin
1 tsp. vanilla extract
1 1/2 C sugar
1/2 C packed dark brown sugar
2 large eggs, at room temperature, lightly beaten *mine were not room temp.

1. Make topping: In a bowl, stir together flour, brown sugar, salt, and cinnamon. Add butter and combine with fingertips until mixture is crumbly. Refrigerate while making batter.
2. Make cake: Preheat oven to 350 degrees. Butter and flour a 9x13 inch cake pan. In a small bowl, combine flour, baking powder, baking soda, salt and spices. In a large bowl, whisk together oil, applesauce, pumpkin, vanilla, and both sugars until well mixed. Whisk in eggs. Add flour mixture to pumpkin mixture and stir until just combined; do not overmix. Pour batter into cake pan and spread evenly. Sprinkle with topping.
3. Bake cake until a toothpick inserted into center comes out clean, 45 -50 minutes. *I baked mine for 45 mins. and it turned out perfect. Allow to cool in pan on a wire rack at least 20 minutes.

Sorry no pic but it looks so pretty, especially when you cut into pieces. It was so good! My family was raving about it.

Peanut Butter Oatmeal Chocolate Chip Cookies

Tried THESE yesterday and think it might turn into my go-to cookie recipe from now on. So delish!
