cut up 1 lb chicken into bite-size pieces.
dip into melted butter (do you have a healthier alternative that will still be effective and tasty?)
then dip into cracker mixture
place on baking sheet. i lined with parchment paper (my recent addiction).
bake at 400* for about 30 minutes. flip half way through to evenly crisp.
we enjoyed with a brown/white rice mixture and veggies.
tasty with anything... as long as you have bbq sauce on the plate!

Yum! I've seen recipes similar to this before. I think I will do strips instead of bite-size pieces...less work :) I would just use a "healthy" butter substitute. (I use Promise spread instead of butter/margarine.) A light coat of olive oil might work, too. I'll try this (strip style) next week...maybe with some noodles...kind of like chicken parmesan.

I made this last night, but in chicken strip form (the less I have to handle raw chicken the better, and this made for less cutting). Yummy! I also served with brown rice and Ryan enjoyed with Sweet Baby Ray's.
